Ingredients
1/2 cup fresh lime juice
3 teaspoons fresh lime zest
1/4 cup olive oil
4 tablespoons fresh cilantro, chopped finely
2 jalapeƱo, chopped finely
4 garlic cloves, chopped finely
1 tablespoon honey
1 teaspoons sea salt
1 teaspoon chili powder or to taste
Chicken Thighs

Your first step will be to juice your limes, it took my 4 limes to get 1/2 a cup of lime juice. Add your 1/4 olive oil and the rest of your spices.

Add your chicken to your marinade and cover. I let mine sit in the marinade all day if your short on time or forget that's okay but you do want to give it at least 2 hours to sit. Make sure you cover the top of the with the marinade and spices. I only used 2 breasts but there is definitely enough of the mixture to marinade up to 4 breasts.

After your chicken has had time to soak up all the wonderful flavors of the marinade fire up the grill, brush a little bit of oil on the surface. Add a little bit of the garlic, cilantro, and jalapeno from the Marinade on top of the chicken and grill them until they turn golden brown and charred on both sides.

Serve with brown rice or I made quinoa to go with mine. I thought the quinoa went perfectly with the flavors of the chicken.

Notes
You can make this chili lime chicken with a cast-iron grill pan or regular skillet, or bake in the oven. Preheat the oven to 400F and bake it for about 20-25 minutes or until the skin becomes brown and charred. You can also use skinless and boneless chicken thighs or breasts
